  1. Turn on the oven. It should be set to 200C/180C fan/gas. Use a fork to mash three large black bananas that have been peeled. Add 75g vegetable or sunflower oil and 100g brown sugar and mix well.
  2. Add 225g of plain flour, 3 heaped tsp baking powder, and 3 tsp cinnamon or mixed spice, and mix them all together. Add 50g of dried fruit or nuts, if you want.
  3. Then, bake for 20 minutes in a 2lb loaf pan that has been sprayed with cooking spray. You should check the cake to see if it’s getting brown. If so, cover it with foil.
  4. Then, bake for another 20 minutes, or check with a toothpick if it comes out clean.
  5. Before cutting, let the food cool down a little. It tastes great when it’s just out of the oven, but the next day it has a lovely gooey quality to it.
