Carrot cake is a traditional dessert that everyone enjoys. However, it is frequently loaded with unhealthy ingredients such as sugar, gluten, and dairy. This Carrot Cake Granola Recipe is a healthy and delicious way to enjoy carrot cake flavors without all of the unhealthy ingredients.

This granola is vegan, gluten-free, dairy-free, and sugar-free, making it ideal for breakfast or a snack. Additionally, it is an excellent method for making use of any leftover carrots. Anyone can be motivated to get out of bed simply by considering the possibility of eating cake for breakfast.

Carrots, which are one of my favorite ingredients, can be found in this glorious granola. Beta carotene, which the body transforms into vitamin A, can be found in abundance in carrots. Carrots are an excellent food source.

The most well-known benefit of vitamin A is the role it plays in the protection and upkeep of healthy eyes. Carrots are an excellent source of the mineral potassium, which plays a critical role in maintaining the body’s electrolyte balance and is essential for maintaining an appropriate level of hydration.

In addition, potassium contributes to the regulation of blood pressure, as well as the preservation of a cardiovascular and nervous system that are both in good health.

Carrot Cake Granola Recipe {Vegan, Gluten, Dairy, Sugar-Free}

Ingredients

  • 400g gluten-free rolled oats
  • four large carrots
  • 6 tablespoons maple syrup
  • 4 tablespoons olive oil
  • 2 tablespoons chia seeds
  • 4 tablespoons pumpkin seeds
  • 3 teaspoon cinnamon
  • nutmeg, pinch

Instructions

  • Prepare the oven by preheating it to 350 degrees Fahrenheit (160 degrees Celsius).
  • Carrots that have been peeled and grated very coarsely
  • Oats, grated carrots, chia seeds, and pumpkin seeds should all be mixed together in a large mixing bowl.
  • Combine the cinnamon and a generous pinch of ground or freshly grated nutmeg in a mixing bowl.
  • Maple syrup and olive oil should be mixed together in the mixing bowl.
  • Continue to mix until the syrup and oil have completely coated all of the dry ingredients in an even layer.
  • Taste and adjust with additional spices as needed.
  • Bake for 30 to 35 minutes, spreading the mixture evenly on a baking sheet lined with parchment paper.
  • Remove from the oven and keep stirring until the mixtures are evenly toasted.
  • Take the food out of the oven, allow it to cool, and then store it in a jar.
