- 1 can of Thai coconut milk, chilled overnight.
- 1/4 cup lime Juice

- I prefer to refrigerate my coconut milk for many hours or overnight since this allows the thicker coconut milk to separate from the residue that resembles coconut water.
- The really thick, nearly solid layer of coconut milk located on top of the can of coconut milk should be scooped into a bowl.
- Keep the coconut water for use in smoothies.
- Whisk the thick coconut milk with an electric whisk for 3 to 4 minutes until you have a very luscious and airy coconut yogurt.
