Ingredients:

  • 1 lg red cabbage
  • 2 lb lean ground beef
  • 2 lg onions, chopped
  • 2 md green bell peppers, chopped
  • 2 md red bell peppers, chopped
  • 2 md yellow bell pepper, chopped
  • 1 Tbsp garlic, minced
  • 1 c brown rice, cooked
  • 1/2 c stove top stuffing
  • 2 can tomato soup
  • 1 can of chicken broth
  • 1 c tomato juice (v8 or clamato)
  • 1 can mushroom pieces
  • garlic pepper season to taste
  • salt season to taste
  • 2-3 dash Worcestershire sauce

Directions:

  • In a plastic bag, put your red cabbage and freeze it overnight or for 12 hours. Remove the ice and let it thaw at room temperature. There won’t be a need to boil the leaves.
  • Cook the rice and let it cool down.
  • Light olive oil should be used for this step. Sauté onions until they are golden brown. Set them aside to cool.
  • In a large bowl, add the ground beef, salt, garlic powder, Stove Top stuffing, Worcestershire sauce, sautéed onions, and rice. 
  • Mix everything together well until they are all the same.
  • Remove the cabbage leaves. Cutaway the part of the cabbage near the core in a V shape that is hard to cut away. It’s a good idea to spray cooking spray on your large casserole or two small casserole dishes before you use them.
  • Put about 1/3 to 1 1/2 cups of meat mixture at the bottom of the leaf, tuck in your corners at the “V,” and roll up the leaf into a tight roll. The amount of meat will depend on the size of the leaf. Repeat until all the meat or leaves are gone. Freeze any meat mixture that you don’t use right away.
