  • 1 large, ripe banana
  • 1 cup oats (gluten-free)
  • 1 large grated carrot (approximately 1/2 cup – 3/4 cup)
  • 1/4 cup raisins
  • 2 tablespoons maple syrup
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon

Instructions

  • Put the mashed ripe banana aside.
  • Combine the oats, maple syrup, carrot, raisins, ginger, and cinnamon in a sizable bowl.
  • Banana included, mix thoroughly to incorporate.
  • On a baking sheet with parchment paper, divide the batter into 9 cookies.
  • Place in a 350°F/180°C preheated oven and bake for 10 to 12 minutes.
